R4, D3 – What was for dinner?

Boring chicken breast and salad?  No way!  We like to eat and keep our taste buds happy.

Shrimp and Spaghetti Squash Scampi – This is my own recipe.

Simple ingredients – 4th and Heart California Garlic ghee (my favorite), shallots, garlic, parsley, s&p, mushrooms, spaghetti squash, and of course shrimp.  The only thing missing from the normal crew was cherry tomatoes.

My husband grilled the spaghetti squash which provided a nice roasted flavor to the dish.  The shrimp don’t take long to cook so wait until the very end.  You do not want overcooked shrimp as they get very rubbery.

Simple, easy, W30 compliant, and most importantly – Delicious!
